Jakob Wennberg 17eecfdb71 fix: use production mode for Enable Banking bank selector

BankSelector defaulted to sandbox=true. Now reads
NEXT_PUBLIC_ENABLE_BANKING_SANDBOX env var, defaulting to false
(production mode) when not set.

Swedish accounting SaaS for sole traders (enskild firma) and limited companies (aktiebolag). Implements double-entry bookkeeping compliant with Swedish accounting law (Bokforingslagen), including VAT handling, tax reporting, and 7-year document retention.
